[Help] Question about levelling ground around fence posts

So I recently helped my brother replace his fence. We tore out the old one and put a new wooden one in, posts and everything. Everything turned out nice except after it was all complete, my brother looked at the grade and he wasn't satisfied. His lawn is uneven with some some high parts, some low parts, and some sloping. And he wants to level it all out. The problem is if he's going to do that, some of the concrete footings are going to be buried completely below the soil. Ideally we should have addressed the grading before we started on the fence. Is there a way to protect the section of the wooden post that would be buried in the soil from rotting? Can we add more concrete on top of the existing concrete to make them higher? Is there a sealant we can apply around the neck of the post where it meets the concrete?
