Off road soap box racer/ gravity powered vehicle?

Hi all, I just found this subreddit and it seems like there are lots of nice folks with good advice. My son, 8, and I want to work on a new hobby project: an off-road soap box racer/ gravity powered vehicle. I say off road because we'll be riding it down dirt and grass hills, not roads; I'm not talking crazy off roading here. I'm hoping to get some advice or maybe be pointed towards a resource with plans that I can follow for a decent build. I am not exactly handy, but know my way around most tools and can follow directions. :)

My wish list: - something that can be built with "common" tools. I don't weld or have access to a welder, for example. - solid frame and sturdy axels that can withstand small bumps, and support my weight (230 lbs), as I'd like a ride too - adjustable seating position, i.e. slide forward for my son, back for me - good steering mechanism with a steering wheel, not pull ropes or foot steering - wheel brakes (operated by pedal preferred), not a board that flops down to rub the ground - good sized, solid wheels for trail bumps and that give decent clearance

And, if not too challenging, rear suspension.

Of course, as simple as possible... I know this may be a lot to ask.
