[Help] What’s the best way to add tile to my fireplace?

I just bought my first home and we’re looking to refinish the fireplace. The only issue is that it has awkward cutouts around the opening. I’m not sure if I should find a way to fill the cutout areas, remove the stone entirely, or something else.

Does anyone have any suggestions? This is one of my first DIY projects, so the easiest method would be best. Thanks!
