Apparently we are going to upgrade the kitchen, is there a reason I shouldn't remove the false wall?

Title says it all. Originally I thought I was going to just redo the drywall where the old light covers were and add recessed lights, but now we want to take out the entire false wall. The cabinets would not be raised up.
